Zema Estate’s policy is to release wines only when they have been adequately matured, though even at more than six years of age, this dry red has considerable life ahead of it.

For me, cabernet inevitably seems the natural accompaniment to lamb, so I’d lash out and buy a couple of lamb backstraps to go with this one and serve with a red-currant jelly.
